As the weather changes from sunny autumn days to colder wetter winter ones it’s time to pull out the winter clothing, drag out the heater and find those warming soup recipes. It’s important to keep the body warm during the colder months. Apart from the obvious reasons of catching a chill and common colds, cold in the body can lead to imbalances causing issues with digestion and detoxification processors. When the skin in particular is cold it becomes sluggish, and loses its vitality and function. This can cause issues like a sallow appearance, congestion and dullness. The best way to combat these issues is with warming treatments, and for the skin in particular, paprika is an excellent way to warm and detoxify. Why paprika? Not only is it a well known and beloved Hungarian ingredient, it has the ability to significantly improve sallow, dull skin in just one treatment. Yes, one treatment. Now that I know about and use paprika in masques on my skin, I could never go back to other treatments. It’s like a mini sauna for your face. Warming Chicken Soup

I found this recipe through BBC’s Grow Your Own Drugs show, but have adapted it to my own (improved Australian) version! This recipe is fantastic if you have a cold, it not only warms and comforts you, and it really helps to relieve the symptoms of cold and flu. This was my favourite thing last winter. Enjoy.

Goji Berry and Chicken Soup

2 tbsp dried Echinacea root (this is hard to find so I substitute with liquid Echinacea root)
200 ml water, freshly boiled
5 tbsp goji berries, fresh or dried
2 litres chicken stock (homemade or from stock cubes)
4 chicken thighs (preferably organic)
2 large onions, peeled and sliced
12 shiitake mushrooms, thinly sliced
10 cm root ginger, peeled and shredded
2 fresh medium-sized chillies, finely sliced
8 garlic cloves, chopped
extra sliced ginger and chillies, to serve

Soak the dried goji berries in a little water and set aside. Combine the dried Echinacea root with the boiling water in a bowl to make an infusion, set aside. Add the chicken pieces, sliced onions, mushrooms, ginger, garlic and chillies to the stock in a large pan and simmer gently for 2 hours. Before serving, add the goji berries the echinacea infusion (or liquid substitute) and add this to the soup, reheating if necessary. Garnishing with sliced ginger and chilli for an extra kick.

Warning: Goji Berries can be disruptive to digestion and have a natural laxative effect on some people, so if you’re not sure, go easy on them! Sometimes I only put in half the amount.

As Easter is approaching fast I thought it would be appropriate to write something about Chocolate. Firstly, I think it is important to note that not all chocolate is bad for you. I can hear the cries of joy already! In fact, some chocolate, like our Chocolate Mousse Hydration Masque, gives you an excellent anti oxidant hit with zero calories! But lets get back to the edible stuff first.

It may be difficult to wade through the choices of Milk, White and Dark chocolate shaped Bunnies, Eggs and Bilby’s this Easter, so I am going to help you get an awesome chocolate hit, without the sugar and fat content of mass produced chocolate. So let’s talk Cacao pronounced (Ka-Kow). Cacao is chocolate in it’s purist form and refers to the tree, beans and the pods inside where chocolate comes from. Cocoa (Koh Koh) refers to the by products of the cacao bean, which are cocoa powder and cocoa butter, which are extracted when the bean is processed in a factory. Cacao and Cocoa is present in all chocolate it just depends on how the chocolate is processed, how much pure cacao you get in your chocolate. Dark chocolate is least sweet and highest concentration of cacao, which is why it is the highest in antioxidants. Studies have shown that eating dark chocolate may lead to better cardiovascular health.

This week I found an excellent recipe for a Raw Brownie. I will be making this for Easter for the family, I hope they like it better than last years chocolate and beetroot cake!

The Raw Brownie
Ingredients:
2 cups whole walnuts
2 ½ cups Medjool dates, pitted
1 cup raw cacao
1 cup raw unsalted almonds, roughly chopped
¼ tsp. sea salt

Directions:
1. Place walnuts in food processor and blend on high until the nuts are finely ground.
2. Add the cacao and salt. Pulse to combine.
3. Add the dates one at a time through the feed tube of the food processor while it is running. What you should end up with is a mix that appears rather like cake crumbs, but that when pressed, will easily stick together (if the mixture does not hold together well, add more dates).
4. In a large bowl (or the pan you plan on putting the brownies in), combine the walnut-cacao mix with the chopped almonds. Press into a lined cake pan or mold. Place in freezer or fridge until ready to serve (it is also easier to cut these when they are very cold). Store in an airtight container.

As we age, our skin cells divide slower, and the layers of the skin begin to thin. Fat cells beneath the dermis begin to weaken and elastin and collagen fibers loosen and unravel. Overall, exposure to ultraviolet (referred to as UVA or UVB) radiation from sunlight accounts for about 90% of the symptoms of premature skin aging, and most of these effects occur by your 21st birthday. Both UVA and UVB rays cause damage leading to wrinkles, lower immunity against infection, aging skin disorders, and cancer. Even small amounts of UV radiation damage collagen fibers. And worse, when your skin is exposed to the sun, cells are damaged and give off free radicals, unstable molecules that cause further cell damage.

SPF skin care protection are some of the topical barriers that can help protect your skin from the effects of solar damage, but the best long‐term prevention for overly wrinkled skin is a healthy dose of antioxidants throughout your daily skin care routine and in your diet.
